Mermaid cake

“Have I dreamt I am a mermaid… or am I a mermaid dreaming I am me?”
This is my first chocolate entremet and the
flavors of this entremet were an easy pick –
Chocolate croustillant as a crunchy base, dark chocolate ganache for depth in contrast with light chocolate sponge and airy chocolate mousse and varlhona crunchy pearls.
The final cake was well balanced for chocoholic.
